Ingredients (Cake)
2 cups sugar
1 stick margarine (room temp)
1/2 cup oil
5 eggs
2 cups all-purpose flour
1 tsp. soda
1 tsp. vanilla
1 and 1/2 cup buttermilk
Ingredients (Icing)
1/2 cup cocoa
1 can evaporated milk
2 cups sugar
1 tsp. vanilla extract
Cake Layer Directions:
Cream margarine, add sugar, oil, and eggs, beating well after each addition. Beat in dry ingredients alternately with buttermilk and vanilla. Beat 2 minutes. Spray layer cake pans with Pam. Bake at 350 degrees until toothpick comes out clean. Let Cool.
Icing Directions:
Mix cocoa and sugar in jar or covered bowl and shake well to break up lumps. Set aside. In a 3 quart saucepan, melt margarine, add evaporated milk. With a whisk, whip in the sugar-cocoa mixturea nd vanilla. Sir well and bring to a boil until thickened enough to spread. Remove from heat.
"I always double the recipe and cook layers as normal cake layers. After cooling, I cut the layers in half with fishing line. This keeps the cake moist and the layers thin. I also ice the cool cake layers when the icing is still warm."
