Ingredients:
Approximately 1 quart of fresh or frozen butter beans
Approximately 2 cups of water
salt to taste (3-4 shakes with salt shaker)
2-3 slices of fresh unsalted pork side meat
approximately 1/2 tsp sugar
flour (optional)
Directions:
Add butterbeans to water. Salt to taste. Bring to a boil. Drop side meat into a pot and reduce heat to simmer. Stir in sugar. Cook 1-2 hours until done. Sometimes I thicken the juice. To thicken, mix 2 Tablespoons of flour into 1/2 cup of water - slowly stir into simmering beans 30 minutes before they are done cooking.
