Ingredients:
2 lbs. yellow squash, cooked
1 medium onion, chopped
1 carrot, grated
1 bell pepper, chopped
8 oz. sour cream
1 stick of butter or margarine, melted
1 can cream of chicken soup
1 pkg. Pepperidge Farm herb stuffing mix, divided
Directions:
Combine all ingredients except 1/4 of stuffing mix. Pour into a greased casserole and top with reserved stuffing mix. Bake at 350 degrees for 30 minutes. Serves 6-8.
