Ingredients:
ground beef (amount depends on how many people you plan on feeding)
1 white onion
1 bell pepper
salt, pepper, garlic to taste
Worcestershire Sauce
Ketchup
1 large egg per lb. of ground beef
Seasoned Bread Crumbs
1 lb. bacon
1 block pepper jack cheese (optional)
***You need muffin pans for this recipe***
Directions:
Dice onion and pepper in very small pieces (or use a food processor). In large bowl, mix first eight ingredients to meat loaf consistency. Grease muffin pans. Fill muffin pans with meat mixture even with the top. If you want, you can push a block of pepper jack cheese into the middle of each mini loaf. Place a piece of bacon cut in half on top of each loaf. Cook at 350 degrees for 45 minutes.
