Annie Gibbs
Ingredients:
Dried Apples
Nutmeg or Cinnamon
Biscuit dough (Annie made this homemade)
Sugar
Directions:
Stew dried apples with sugar and nutmeg or cinnamon to taste. Pinch off biscuit dough and roll out into 6"-7" circles. Add apples but do not overfill inside the circles. Fold the dough and crease the edges with a fork to seal in a half circle shape. Fry applejacks on medium heat until brown on both sides.
This recipe was never written down by Annie Gibbs. She was very well known for her apple jacks. Pearl Gibbs, her daughter, furnished this recipe. This is her best recollection of the original apple jacks recipe.
