Ingredients (for Pie)
1 cup sugar
3 Tbsp cornstarch
1 can Carnation milk
1 can water
4 eggs, separated
1 (3.5 oz.) can flaked coconut
1 Tbsp. vanilla
2 baked pie crusts
Ingredients (for Meringue)
4 egg whites
2 Tbsp. water
4 Tbsp. sugar
4 tsp. cornstarch
Directions:
Mix sugar and cornstarch together. Add milk, water, eggs yolks, and vanilla. Mix well. Cook until thickened and then add coconut. Pour into 2 baked pie crusts. Top with meringue and brown in 400 degree oven.
Meringue: Add water to the egg whites and beat until foamy. Add sugar 1 Tbsp. at a time, until egg whites are stiff. Keep beating and add 1 tsp. cornstarch at a time until gone. Put on 2 pies and bake at 400 degrees for 5 minutes or until brown.
