Ingredients:
2 cups flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon
3 large eggs
2 cups sugar
3/4 cup vegetable oil
3/4 cup buttermilk
2 tsp. vanilla extract
2 cups grated carrots
1-8oz can crushed pineapple (drained)
4 oz. flaked coconut
1 cup chopped pecans
Directions:
Grease three 9" round cake pans. Preheat oven to 350 degrees. Stir together flour, soda, salt, and cinnamon. In another bowl, beat eggs, sugar, vegetable oil, buttermilk, and vanilla. Add flour mix beating at low speed until blended. Fold in carrots, pineapple, coconut, and pecans. Pour batter into prepared cake pans. Bake for 30 minutes.
