Ingredients:
Approximately 1 quart of fresh peas or frozen out of the freezer
Salt to taste (3-4 shakes with salt shaker)
Approximately 2 cups of water
2-4 slices of pork side meat (I use fresh unsalted side meat)
Directions:
Add peas to water. Salt to taste. Bring to boil and reduce heat to simmer. While peas cook, fry 2-4 slices of pork side meat until crisp. Carefully pour hot grease from side meat into simmering peas. Be careful not to be burned by popping grease. Cook to taste. Some like to cook about 1 hour and peas still have a green taste. I cook them about 2 hours and peas are brown. May have to add water if liquid reduces.
